It continues back at the table, where you'll be served a variety of side dishes, such as fried polenta, fried plantains and cheese bread. The main course, i.e. the meat-eaters marathon, starts when you flip your coaster-sized "chip" from the red side to the green side, signaling to the meat cutter that you're ready to be served.
